CHEF Head chef Vilay Phanouvong has crafted works of art for food lovers in Albuquerque and Santa Fe for 21 years. Originally a student studying French at University in his native Thailand, Vilay emigrated to the United States and found his way to New Mexico. With his vast knowledge and experience of sushi, don't hesitate to approach him and ask him any questions about the Japanese delicacy.

Jae Hoon Park began as a bus boy at a local Japanese restaurant but soon apprenticed as a sushi helper within a short amount of time. Although Jae has only been a chef for a few years, his technique and passion for sushi belong to a master of the discipline. Always experimenting with new recipes, he treats customers to his creations to their delight.

One of the first sushi restaurants on Albuquerque's West Side, Ichiban Japanese Restaurant opened for business in 1999. Ichiban is family-owned and operated by Kwang Shin, a local entrepreneur and resident of over 25 years.
